  This is VERY Yucky. You see, before there was Jell-O, gelatin was extracted from the bony parts of animals! If you have some time to spare and don't mind pig's feet, then follow this recipe. Your science teacher will probably be impressed! You'll have to start this two days before you want to eat it.

Shortcut: Sure, you can cheat and follow the directions on a box of Jell-O, don't forget to add some apples, bananas or other fruit.

Ingredients:
  • 2-3 Pig's Feet (they are usually sold cut down the middle)
  • 5 eggs
  • 1/2 cup honey
  • 1quart orange juice
  • Cut-up fruit (no pineapple)
Equipment:
  • Large pot
  • Colander
  • Cheesecloth
  • Bowl
Directions:
  1. Day one: Place Pig's feet in a big pot of water (about 4 quarts), boil. Lower heat and cook slowly for 4 hours (or until water is half gone), skimming off foam while it is cooking. Remove from heat. Pour the liquid through a strainer (you can save the bones and use them again to make more if this is your idea of fun!). Pour into a bowl and chill overnight.

  2. Day two: You have gelatin! But you're not finished yet, you need to get rid of the some Yucky stuff and make it sweet. While it is cold, scrape the fat off the top. Put a few inches of hot water in the sink and place the bowl in it to loosen the gelatin. Now, turn it into a pot, scrapping off any meat scraps. Heat over low heat. Next, you will clarify the gelatin to get rid of the cloudiness. Separate the five eggs (you may need adult help with this), save the shells. Beat the egg whites until they are foamy. Smash the eggshells, put the shells and whites into the warm, melted gelatin. (The eggs will soak up the parts you want to get rid of.)

  3. Pour in the honey to make it sweet. Stir it just to mix, then don't stir again. Boil for 10 minutes. Add 1/2 cup of cold water and boil 5 more minutes. Take off stove, cover and let it stand for 30 minutes.

  4. Cut up fruit. Line a colander with several layers of cheesecloth. Run hot water over the cheesecloth to get it warm, so when you pour the gelatin in, it won't gel. Place the colander over a bowl. Pour the eggy gelatin through the colander. Squeeze the cheesecloth to get all the liquid out. Add the fruit juice (the amount of juice should equal the amount of gelatin). Add cut-up fruit and chill overnight.

  5. Day three: Eat!
