Here's an all-time favorite recipe for flat, pancake-like breads called Johnnycakes.
Early settlers first called them "journey cakes" because these portable treats were perfect for
on-the-go eating during long journeys through New England. (You'll really "flip" for them, too, so
keep that frying pan handy!)
Note: this recipe serves 1-2 guests; make as many as you need by simply multiplying the
ingredients.
Ingredients
- 1 cup yellow cornmeal
- 1/2 teaspoon salt
- 1 cup boiling water
- 1/2 cup milk
What to do:
- Mix the cornmeal and salt, then add the boiling water, stirring until smooth.
- Add the milk. Stir the mixture well.
- Grease a heavy, 12-inch frying pan with butter or margarine and set it over medium-low heat.
- Drop tablespoonsful of the batter onto the pan.
- Cook them until they're golden brown for about 5 minutes.
- Turn over the cakes carefully with a spatula. Then cook the other side for about 5 minutes.
Serve the cakes with butter and maple syrup. Now you've really got something that'll
make you go mmmmmmm.
